Key Responsibilities

  • Lead the conceptualisation, development, and execution of innovative menus spanning Continental, Local (modern British), and Fine Dining cuisines.
  • Oversee all kitchen operations, including staff supervision, scheduling, performance management, and ongoing culinary training.
  • Ensure the highest standards of food quality, consistency, presentation, and flavour profiling.
  • Manage inventory, optimize food costs, reduce waste, and manage supplier relationships effectively.
  • Maintain a pristine, organised, and safe kitchen environment, strictly adhering to all health, safety, and hygiene regulations (e.g., HACCP).
  • Collaborate closely with the front-of-house team to ensure a seamless and exceptional dining experience for guests.
  • Foster a positive, respectful, and highly productive work environment that encourages creativity and professional growth.
  • Actively research and incorporate seasonal, local, and sustainable ingredients into menu offerings.
  • Stay abreast of global culinary trends and continually implement new techniques and practices.

Required Skills

  • Proven experience (minimum 4 years) as a Head Chef or Senior Sous Chef in a reputable fine dining establishment.
  • Extensive expertise in Continental (French, Italian, European) and modern British cuisine.
  • Exceptional leadership, team management, and motivational abilities.
  • Comprehensive understanding of food safety and hygiene regulations (e.g., HACCP, UK food safety standards).
  • Outstanding culinary technique, creativity, and an exacting palate.
  • Proficiency in menu planning, costing, inventory management, and kitchen financial control.
  • Demonstrated ability to perform effectively and maintain composure under pressure in a fast-paced environment.

Preferred Qualifications

  • Culinary degree or equivalent professional qualification from a recognised institution.
  • Experience with advanced culinary technologies and modern kitchen equipment.
  • Established network of local and sustainable food suppliers.
  • Food safety certification (e.g., Level 3 Supervising Food Safety in Catering).
  • Fluency in additional languages relevant to culinary arts (e.g., French, Italian).
