Key Responsibilities
- Execute and manage all aspects of food preparation and cooking for Continental, Local, and Fine Dining menus.
- Develop and innovate new dishes and menus, incorporating seasonal ingredients and culinary trends.
- Ensure consistency and excellence in food quality, taste, and presentation.
- Oversee kitchen operations, including inventory management, stock rotation, and waste control.
- Adhere strictly to all health, safety, and hygiene regulations (HACCP standards).
- Train and mentor junior kitchen staff, fostering a positive and productive work environment.
- Collaborate with the Head Chef on menu costing, supplier relations, and kitchen efficiency.
- Maintain a clean, organised, and efficient work station at all times.
- Manage kitchen equipment maintenance and ensure proper use.
Required Skills
- Proven experience as a Chef in high-volume or fine dining environments.
- Expertise in Continental and traditional Scottish/British cuisine.
- Advanced culinary techniques and plate presentation skills.
- Strong understanding of food safety and hygiene regulations.
