Hiring.zycto is seeking a highly skilled and dedicated Distillery Operator – Specialist to join our growing team in Tuscany, Calgary. This is an exceptional opportunity for a seasoned professional to play a pivotal role in the production of our premium craft spirits, from grain to glass. As a Specialist, you will be instrumental in overseeing and executing all phases of the distillation process, ensuring the highest standards of quality, safety, and efficiency. You will operate and maintain a range of specialized distillery equipment, including mash tuns, fermenters, stills, and filtration systems, bringing your expertise to every batch.

This position requires a profound understanding of standard operating procedures (SOPs), Good Manufacturing Practices (GMPs), and Hazard Analysis and Critical Control Points (HACCP) principles within a food and beverage manufacturing context. You will be responsible for ensuring that all production activities adhere strictly to these guidelines, contributing to a culture of quality and accountability. The successful candidate will also be expected to troubleshoot minor equipment issues, perform preventative maintenance tasks, and collaborate effectively with the production team, quality assurance, and management to optimize output and minimize waste. Key Responsibilities
- Operate and monitor all distillery equipment, including milling, mashing, fermentation, distillation, and barrel aging systems.
- Perform precise measurements, calculations, and adjustments to ensure product specifications are met at each stage.
- Conduct in-process quality control tests and sensory evaluations, documenting results accurately.
- Execute cleaning-in-place (CIP) and sanitation procedures for all equipment and production areas.
- Monitor inventory of raw materials, packaging supplies, and finished goods, assisting with ordering as needed.
- Adhere strictly to all safety protocols, Good Manufacturing Practices (GMPs), and relevant regulatory requirements.
- Troubleshoot minor mechanical and process issues, performing routine preventative maintenance.
- Maintain detailed and accurate production records, logs, and batch sheets.
- Collaborate with the production team to optimize processes, improve efficiency, and reduce waste.
- Assist in the development and refinement of new spirit recipes and production techniques.
- Participate in ongoing training and professional development to stay current with industry best practices.
Required Skills
- Minimum of 3 years of hands-on experience in a distillery, brewery, or similar beverage production environment.
- Proven understanding of distillation principles, fermentation science, and spirit maturation.
- Strong mechanical aptitude and experience operating and maintaining industrial equipment.
- Excellent attention to detail and a commitment to quality control.
- Ability to perform accurate measurements, calculations, and record-keeping.
- Proficiency in following Standard Operating Procedures (SOPs) and safety protocols.
- Ability to lift up to 25 kg regularly and stand for extended periods.
- Strong problem-solving skills and ability to work independently or as part of a team.
- Basic computer literacy for data entry and reporting.
Preferred Qualifications
- Post-secondary education in Brewing & Distillation, Food Science, Chemistry, or a related field.
- Experience with HACCP and GMP certifications.
- Forklift operation certification.
- Knowledge of Alberta liquor regulations and compliance.
- Prior experience with process automation and control systems.
