Key Responsibilities
- Assist the Head Chef in managing and overseeing all kitchen operations, including food preparation, cooking, and presentation.
- Supervise, train, and mentor junior kitchen staff, fostering a positive and productive work environment.
- Support the Head Chef in menu planning, development, and costing, contributing creative ideas for seasonal dishes and specials.
- Ensure strict adherence to food safety, hygiene, and sanitation standards (HACCP) at all times.
- Manage kitchen inventory, including ordering, receiving, and storage of ingredients to minimise waste and control costs.
- Oversee the quality and consistency of all dishes leaving the kitchen, ensuring they meet the restaurant's high standards.
- Maintain a clean, organised, and safe kitchen work area.
- Step in for the Head Chef in their absence, taking full responsibility for kitchen management.
- Handle staff scheduling and performance management under the Head Chef's guidance.
- Resolve any kitchen-related issues or complaints efficiently and professionally.
Required Skills
- Proven experience as a Sous Chef or highly experienced Chef de Partie in a reputable kitchen.
- Strong culinary skills across various cooking techniques and cuisines.
- Excellent leadership and team management abilities.
- Thorough understanding of food safety and hygiene regulations (e.g., HACCP certification).
- Ability to work effectively under pressure in a fast-paced environment.
