Key Responsibilities

  • Assist the Head Chef in all aspects of kitchen management and operations.
  • Oversee daily food preparation, cooking, and presentation to ensure consistency and quality.
  • Lead and mentor junior kitchen staff, fostering a positive and productive team environment.
  • Manage inventory, ordering, and stock rotation to minimize waste and control costs.
  • Ensure strict adherence to food safety, hygiene, and sanitation standards.
  • Contribute to menu development, including recipe creation, costing, and ingredient sourcing.
  • Maintain kitchen equipment and promptly report any maintenance needs.
  • Manage kitchen operations effectively in the absence of the Head Chef.
  • Monitor food production to ensure timely delivery of all dishes during service.
  • Implement and uphold high standards of cleanliness and organisation throughout the kitchen.

Required Skills

  • Proven experience as a Sous Chef or Senior Chef de Partie for at least 3 years.
  • Strong leadership and team management abilities with a track record of motivating staff.
  • Excellent culinary skills and a deep understanding of various cooking methods and cuisines.
  • Exceptional organizational and time management skills, especially during peak hours.
  • Ability to work efficiently and calmly under pressure in a fast-paced environment.
  • In-depth knowledge of food safety regulations, HACCP principles, and hygiene practices.
  • Creativity and passion for developing new dishes and refining existing ones.
  • Proficiency in basic kitchen finance, including stock control and waste management.

Preferred Qualifications

  • Culinary degree or equivalent professional qualification from a reputable institution.
  • Experience in fine dining or high-volume, multi-outlet restaurant environments.
  • Proficiency in inventory management software and POS systems.
  • First Aid and advanced HACCP certification.
  • Knowledge of local and seasonal ingredients and supplier relationships.
  • Experience with menu engineering and costing.
