Key Responsibilities
- Manage and oversee a designated kitchen section (e.g., larder, hot section, pastry), ensuring smooth and efficient operation.
- Prepare, cook, and present dishes to the highest standards, adhering to recipes, portion controls, and presentation guidelines.
- Lead and mentor Commis Chefs and kitchen assistants, fostering a positive and productive working environment.
- Ensure mise en place is complete, fresh, and replenished for your section before and during service.
- Monitor stock levels, order supplies, and minimise waste to control food costs effectively.
- Strictly adhere to all food safety, hygiene, and health and safety regulations, maintaining a clean and organised workstation.
- Contribute to menu development and seasonal specials under the guidance of the Head Chef and Sous Chef.
- Assist with inventory management, stock rotation, and receiving deliveries.
- Collaborate with other kitchen sections and front-of-house staff to ensure seamless service.
Required Skills
- Proven experience (minimum 30 months) as a Chef de Partie or strong Senior Commis Chef in a reputable kitchen.
- Demonstrable expertise in various cooking methods, kitchen equipment, and culinary techniques.
- Solid understanding of food safety and hygiene standards (HACCP certification preferred).
- Ability to work effectively under pressure in a fast-paced environment.
- Strong communication and interpersonal skills, with the ability to lead and motivate a small team.
- Excellent organisational and time management abilities.
- A genuine passion for food quality and presentation.
